Icelandic cod with boreal maple

In the spring, we sometimes feel like pairing our meats with Quebec maple products. But have you ever tried maple fish? Salmon and many white fish are delicious when paired with maple!

Ingredients :

2 Icelandic cod loins (Or of the Pacific )

⅓ cup of Boreal maple syrup with dune pepper (or Labrador Tea)

½ lime

1 pinch of lime zest

Salt and pepper, to taste

Ground dune pepper (optional)

Preparation

In an airtight bag, mix the boreal maple syrup, lime juice and zest.

Add the cod to the bag and marinate in the refrigerator for 1 hour or more.

Preheat oven to 350°F.

On a baking sheet lined with parchment paper, bake the cod for 10 to 12 minutes. Add salt and pepper to taste.

For added flavor, add a pinch of ground dune pepper (optional).

Serve with Basmati rice and green beans, if desired.
