Maple sugar loaf

The most rustic product, also called "country sugar," maple sugar loaf is the maple sugar that is molded into a brick or other shape to let it set. In the past, this was the best way to preserve maple sugar for the year.

Grated with a large knife, it adds an authentic flavor and a crunchy touch from time to time on top of any cake. It's somewhat the ancestor of granulated maple sugar.
